HARVEST
Grapes were harvested from prime vineyards in Sonoma and Mendocino Counties from September 4 through September 26, 1997. Our harvest began a month early with grapes being picked at a frantic pace. Weary but happy, we exulted in intensely aromatic fruit, layered with lush, dense flavors of blackberry, chocolate and cassis. We increased the level of new oak to complement the overall complexity of tannins.
WINEMAKING
The grapes were fermented thirteen days in stainless steel to complete yeast fermentation, followed by four weeks in large oak cooperage while completing malolactic fermentation. The wine was aged in 62% French and 38% American small oak barrels for twelve months and in large oak cooperage for an additional six months. The wine was then bottled and aged for an additional fourteen months at the winery so that upon release it would be elegant and approachable.
FINISHED WINE
The 1997 Cabernet Sauvignon is a richly textured, full-bodied wine with multi-layered flavors of black cherry, blackberry and cassis. Slight notes of cedar and sweet leather and a subtle framework of oak and vanilla complete this complex wine.
