True, tender, fall-off-the-bone meat is most commonly considered and praised as "first-rate," however, this restaurant believes, and stands behind, the case to be made for texture. Slowly smoked pork, enjoyably succulent and tender, is best served in chunky bits - a good mixture of the crustier outer pieces and the juicer center - pulled off by hand. Rubbed with a unique combination of spices that has been marinating for 24 hours.
They'd like to recommend pairing the pulled pork with their delicious vinegar BBQ sauce. As a meal, the pulled pork is tasty, as a sandwich it's best on a homemade pretzel bun and topped with a hearty portion of tangy coleslaw - crunchy and pungent flavors mixed together. These ribs hold their own!
