Gift Box includes a total of 25 - 30 pounds of the following: mixed cuts of steak including ribeye, tenderloin and strip loin, ground beef and a roast.
Highland cattle, originally from Northern Scotland, are one of the oldest beef breeds. They have evolved to produce naturally lean, tender beef without hormones or growth stimulants. A heavy hair coat insulates them in harsh climates and reduces the need to put on surplus fat.
Finally, after years of increasing the number of Highland breeding stock in the United States, the Vermont Highland Cattle Company is ready to share this exquisite beef with the public.
We allow our Scottish Highland cattle to enjoy 100% pasture grass (grain finished at customer request).
We think great beef is the result of a complex combination of factors including breed, feed, care and age. What makes Vermont Highland Cattle Company beef special is that we pay attention to all of the details that help us achieve great taste.
We begin by raising pure pedigree Highland cattle. This breed has been chosen for their superior eating quality: they produce a beef that is well-marbled, tender and exceptionally flavorful.
We never use growth-promoting antibiotics or hormones. We never feed our cattle any meat or meat by-products such as chicken feather, chicken litter or fish meal.
We treat our cattle with dignity and respect. Our ranch managers do whatever is necessary to reduce the amount of stress in the animals day-to-day lives.
When the cattle reach maturity, we slaughter them at a USDA facility. Our managers accompany our cattle to the slaughterhouse so they have a familiar and friendly person with them.
We currently age our beef for up to 14 days in an USDA or VT inspected facility. We will, in the future, offer custom Dry Aging for our customers. Aging helps mellow the flavors and makes the meat more tender.
