Here's how Dave started rolling ahead of his competitors. He had the flour mill blend a custom formula for pizza flour. He did the same at a cannery to produce the rich, tomato-based sauce used on our pizzas. Then he found guys with good upper body strength to roll out and toss pizza dough. While we now use a new-fangled contraption to roll out the dough, we still hand-toss it, each and every time. Somehow, the tossing makes the difference!
