Cooking for David: Producing this cookbook was a learning experience far beyond what we expected in the beginning. Besides the fun work of developing and tasting recipes, we gained new skills and knowledge of food composition. The most rewarding part was the community experience in working together and the extended community felt from those who share in this project.
The authors, Sarah Colman, RD, CDE, and Dorothy Gordon, BN, RN, have not spared attention to the elements of taste and aesthetics. These are not small consideration in light of the impact of health on appetite. In order to maintain healthy balance of the body, eating properly is of the essence.
The Evolution of Eating Habits:
In the old days it was: 3 martinis followed by a whole standing rib roast with all the fat left on; then a scotch and a half a rib roast, fat trimmed; rack of lamb with cabernet; chicken with sauvignon blanc; and finally fish with Evian bottled water.
This book includes Food Selection, Meal Planning, Breakfast, Desserts, Meats, Fish and Seafood, Poultry, Rice/Pasta/Bread, Salads and Sauces and Vegetables.
Sample Recipe: Spicy Lemon Pasta
2 tsp. margarine or butter
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped green bell pepper
¾ cup hot cooked pasta
2 Tbs. fresh lemon juice
1tsp lemon zest
1 tsp. Mrs. Dash Onion Herb Seasoning
Melt margarine in nonstick pan, and sauté onion, celery and green bell pepper. Stir into hot pasta.
Mix lemon juice, zest and Mrs. Dash © and add to hot pasta. Serve.
