The nutritional report on Kernza™ - suggests that it has 1100 times the folate of annual wheat, over 500 times the calcium, 400 times the lutein, 300 times the Omega-3 fatty acids, fiber, selenium, and vitamin B-6. It is low in gluten and requires leavening baking. It should be mixed with bread flour.
