The texture and taste of this mushroom is much like that of cooked chicken, hence its name.  Chicken of the woods mushrooms combine well with meat and poultry dishes. Pair with fresh herbs, potatoes, apples, pasta or rice. Chicken of the woods mushrooms will stand up to cooking and may be baked or roasted as well as sauteed.  Mediterranean cuisines have always appreciated this mushroom and favor it in many of their dishes.
