Back in 2005, soon-to-be owners Tom Cranley and Brewer Stouffer shared a common vision:  They both wanted to bring a true neighborhood pizzeria to Madison’s hipster east side.  They agreed it should feature fresh, delicious food in a setting where people can eat, drink and be neighborly.

The Roman Candle was born.

Today, the award-winning pizzeria has locations on Madison’s funky Williamson Street and in the heart of historic downtown Middleton.  In 2010, we’ll also be opening our doors in Fitchburg.  At each location, here’s what you’ll get:

• A menu that features fresh, locally-sourced items, used creatively in the kitchen. Our New York style thin-crust pizzas feature the most unique toppings in Madison – walnuts, roasted asparagus, portabella mushrooms and more.  It’s a healthy alternative to chain pizza, with the right balance of carbs, fats and proteins.  The menu designates items that are local, made-from-scratch, and customer favorites.


• A cozy slice of community. Our dining areas feature hand-made booths and tables and Legos and books for the kiddies.   It is a welcoming place where college students, families, and working professionals all come together—for a meal, a slice, or a quick drink.
