The Wine
This Sauvignon Blanc is less herbaceous than is commonly found with the varietal. Instead it shows rich citrus and stone fruit flavors. The oak contributes to an orange cream note on the nose and the creaminess follows through on the palate, but the wine maintains crisp, refreshing acidity.
The Winemaking
All of our wines are fermented with native yeasts only. We add nothing to the wines except for a small amount of sulfur which protects the wine during the aging process. We believe letting the wine make itself is the only way to truly express the vineyard through the wine. This Sauvignon Blanc received overnight skin contact to add extra flavor concentration and complexity.
The Vineyard
This two vineyard blend starts with the Cararo Vineyard in the Dry Creek Valley where river bank soils with rocky structure provide minerality. The heritage head trained vines which limit crop production provide complexity. The Colombini Vineyard in Redwood Valley, Mendocino County, has red hillside soils which restrict vines to the most petite growth, providing concentrated flavors. These two regions are famous for making classic Sauvignon Blanc in a fruit forward style.
