This set contains five types of cocoa; four bottles and one small sampler. The Mayan and Mexican are blends and are great for baking and drinks. The spicy Mayan is blended with chiles, hazelnuts and more. The Mexican is a smooth and sweet blend mixed with pure vanilla and Ceylon cinnamon. The three other pure cocoas include Natural, Dutch process and Black Onyx Dutch process. The Natural and the Black Onyx are exclusively for baking and the Dutch process can be used for baking and drinks. Because black onyx cocoa has less fat, it does tend to create a drier product. Try adding the sample in this set to your regular cocoa in your next chocolate recipe. The additional spices used to pack this set are also of excellent quality and should be stored in a container for future use.
