Chef Dan Barber's renowned Blue Hill restaurant, opened in 2000, is located in a landmark speakeasy just off of Washington Square Park. The menu showcases local food with ingredients sourced from nearby farms, including Blue Hill Farm in Great Barrington, Massachusetts, and Stone Barns Center for Food and Agriculture in the Hudson Valley (see item 117).
