Thomas’s experience most recently includes six years as beverage director at the award-winning Blue Hill at Stone Barns restaurant, where he increased revenue from wine sales by 500 percent in his first year, and was recently named one of the best front-of the-house professionals in New York by the food blog Eater and an editor from Saveur. In addition to curating a global list of 1,200 references with an emphasis on European wines that appeal to collectors, Thomas managed, trained and educated a staff of 25. His knowledge is supported by a degree from the Culinary Institute of America and a long history of experience in kitchens and service at exceptional New York restaurants like Le Bernardin, Alain Ducasse at the Essex House and Mario Batali’s Otto.
