  • What kind of fish do you use for the gefilte?



    • Our gefilte is made from high quality, sustainably sourced whitefish, pike and salmon. Our whitefish and pike are from the Great Lakes and are best choice fish options according to the Sustainable Seafood Guide from the Monterey Bay Aquarium. Our salmon sourcing varies depending on the season. When avalable, it comes from the Pacific and is sourced through Wild Edibles. We know you’ll be able to taste the difference that freshness and sustainability make!




  • Is your gefilte gluten free?



    • Yes! There is no matzo meal in our gefilte. Only whitefish, pike, salmon, salt, pepper, sugar and eggs. However, our facility is not completely gluten free, so those of you with severe gluten allergies should be aware that trace amounts of gluten may be present.




  • Is you gefilte sugar free?



    • No, our gefilte is not currently sugar-free.




  • What makes your gefilte so special?



    • The Gefilteria’s gefilte and horseradish are handmade using only the highest quality ingredients. We focus on sourcing fish that is sustainably caught. Unlike other gefilte makers, The Gefilteria does not put our gefilte in a jar. We believe that you can taste the freshness of our foods in every bite. Our gefilte also updates this classic dish with a handsome, contemporary look and texture. This is a food that tastes great AND looks great, and will get guests talking.




  • Can I freeze your gefilte?




    • Absolutely! Our loaves freeze well. Gefilte will come out a bit more watery than before, but the great taste will remain. To defrost, place gefilte in the refrigerator the night before you wish to serve and voila! Gefilte perfection. Freezing is a great way to extend the life of our gefilte.

"When it comes to elaborate meal preparation, a Passover seder beats Thanksgiving hands down. And if some people are daunted by roasting a turkey, consider making gefilte fish from scratch. Most cooks do not even try. The default gefilte for most is a jar from the supermarket.


Gefilte fish is an Eastern European Jewish tradition, not one of the holiday’s symbolic foods like haroseth. Nonetheless, it is as requisite as the four cups of wine on most seder menus. In recent years, gefilte-challenged cooks have been able to find ready-made ground fish balls at fancy food shops, as a somewhat better alternative to the humdrum jarred variety.


And now there is a new option. Gefilteria, a company just started by three Brooklyn entrepreneurs, specializes in what it calls artisanal gefilte fish, an updated version that pays attention to the freshness and sustainability of the fish used. With one eye on the pushcart and another on the seafood guidelines issued by organizations like the Monterey Bay Aquarium, they make a gefilte fish loaf from ground whitefish and pike, with a ribbon of rich Pacific salmon in the center. The flavor is clean and bright, delivering a hint of sweetness, with assertive minced onions in the mix.


Alongside, there are two kinds of fresh horseradish, flavored with sweet beets or spicy carrots, both well-textured and not so strong as to overpower the fish, which has good flavor that deserves to shine."
