Peter teaches classes in his kitchen that focus on the artisanal techniques which our ancestors all knew how to do as a matter of survival but which have largely been forgotten by non-chefs. Pickling vegetables, curing meat, making cheese and yogurt, fermenting vinegar, and baking bread (among other things) are all easy and highly rewarding. The classes are small and include lots of tasting and hands-on demonstrations.
