Versatility of Icewine
It's widely-acclaimed as the exquisite culmination of a fine meal but with its astonishing scope of flavors, Icewine can enhance the dining experience in a great many ways. Great chefs use Icewine as a "secret ingredient" to great effect, in savory sauces, reductions, marinades, ices, compotes, glazes, chutneys and dessert sauces. It can even add its extraordinary finesse to update the most famous of cocktails, the classic martini.


Viticulture/Vinification
Inniskillin Icewine, recognized as one of the world's great wines, is a gift from winter to wine lovers. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops below -10º . Only a few drops of luscious nectar can be extracted from each bunch, which is expertly guided through fermentation to achieve the rich and alluring specialty known as Icewine.














Tasting Notes
Sublime aromatics of fresh lime, apricot, grapefruit and peach blossom with a slight minteral edge. A racy interplay of sweet and tart offer up echoing balanced flavors of lemon, lime and candied apricot.


Food Pairing Suggestions
Perfect on its own as a dessert, or an excellent match to fresh fruit, rich pâté or fine blue veined and cream-based cheese.


Serving Notes


Serve 1.5 to 2 ounces of Icewine per glass, chilled to approximately 43°F. A standard 375ml bottle will serve approximately 7-8 people. Once opened, you can store Icewine for up to four weeks if properly sealed and refrigerated.

Pick up/shipping information: At auction close, item will be available for pick up in Sebastopol, CA on the designated pick up days or it can be mailed at the winning bidder’s expense.


For planning, note that the pick up days are Friday, March 29, 2013 and Saturday, March 30, 2013 in Sebastopol, California. All information and details about pick up dates, times and location will be given in the auction closing email.


Wine is shipped via AIM Mail Center and to ship, here are the special notes in regards to shipping wine:


1. Actual shipping charges will be charged and mailing/shipping insurance is extra. Winning bidder is responsible for all fees. Estimated shipping for a single bottle of wine is between $19-26. Alaska is $71 and Hawaii is $54.


2. All wine requires a wine shipper in addition to any shipping and/or insurance charges. The prices for the wine shipper are as follows: a 1 bottle shipper is $4.50, a 2 bottle shipper is $6.75, a 3 bottle shipper is $7.75, a 4 bottle shipper is $9.75, and a 6 bottle shipper is $10.75.


3. Wine is shipped “adult signature required” and the delivery must be signed for, it cannot be left without a signature. There is an additional $4.95 charge for this and it cannot be waived.


4. Wine can be shipped to the following 30 states: Alaska, Arizona, California, Colorado, Connecticut, Florida, Georgia, Hawaii, Idaho, Illinois, Iowa, Louisiana, Minnesota, Missouri, Nebraska, Nevada, New Hampshire, New Mexico, New York, North Carolina, North Dakota, Oregon, Rhode Island, South Carolina, Texas, Virginia, Washington, West Virginia, Wisconsin, and Wyoming. If a state is not listed, state law prohibits wine from being shipped there.
