Description

Sylk Cellars Cabernet Sauvignon is a limited production, single-vineyard, estate-grown wine. Our 2006 is now sold out.  The 2007 vintage culminated in 450 cases and the 2008 in 385 cases. Most vineyards in Napa Valley saw a reduction in harvest tonnage in 2008 — and Sylk Cellars was no exception, producing just under six tons from our two acres of vines.

Sylk Cellars is 100% Cabernet Sauvignon and all of the fruit is from our vineyard. Our wines are aged primarily in new French oak barrels, 60% new in 2006 and as much as 75% new in 2008, for 22 months. We keep our wine in the bottle for almost one year before the formal release. Our winemaker and vineyard manager are artisans and their experience and judgment are reflected in the quality of the wine.

Our 2007 and 2008 wines are now available, however, the 2007 inventory is almost gone. Our 2007 Cabernet won a Gold medal at the very prestigious California Orange County Fair.  Both wines display aromas cherry, ripe plum and toasted almonds.  The taste profile is dominated by ripe cherry, followed by tamarind, coconut and toasty oak.  On the palate the wines are full bodied with a soft tannin feel and elegant finish.  Our 2009 Sylk Cabernet was just released on December 1, of this year oh yeah, 2012.  It has also been sent to the San Francisco Chronicle Wine Competition – we think it’s that good!!
