At Dunn Bros Coffee we roast all our beans in-store and sell them within three days of roasting. It's a stringent freshness standard, to be sure, but it's the only way to ensure our beans and drinks are as fresh and delicious as possible. It's not the easiest way to do it, but it is the right way.

Coffee beans develop their aroma and flavor during the roasting process. As the beans are roasted, complex chemical reactions take place. Moisture is driven off. Carbohydrates are transformed to soluble sugars. Proteins are broken down and aromatic oils (called coffee oils, or caffeol) are created. These aromatic oils are water-soluble and carry the flavors that you taste in a cup of coffee. Unfortunately, as soon as the coffee beans are roasted, oxygen starts to break down the oils and the beans begin to lose their flavor. The fresher the beans are, the more flavorful the final cup.
