2010 Syrah


This is what happens when you barbecue exotic fruits covered in chocolates and tandoori spices. An inside out of a melting pot of foods from around the world. A syrah with a gentle seductive grip. Layers of fruit and spice dance along the palate with expressions of black cherries, chocolate, ripe raspberry, and coffee. 20% Grenache blend from the same Vineyard softens the spices and keeps the bites to a nibble.


2012 Viognier




An afternoon picnic at a freshly mowed park while aromas from a nearby orchard cruises by from a late spring breeze. Our gentle Viognier satisfies the heat of the moment. An adult version of the fruit cocktail with hints of pears, pineapples, and Crenshaw melons. A subtle minerality laces through the soft structure of the wine. A perfect wine that hits the spectrum of food pairings. 



2009 Cabernet




Cork dork winemaking notes: The Cabernet Sauvignon was made along with our 2009 Merlot. To make these 2 wines, we received 3 tons of Cabernet Sauvignon, 1 ton of Merlot, and 1.5 tons of Cabernet Franc within 10 days of one another from Los Chamizal Vineyard in late October. The Cab was macerated after being cleaned of all leaves, stems, and jacks. The Cab, Merlot, and Cab Franc went through individual fermentations, using Bordeaux yeasts. After a couple of weeks of fermentation, the varietals were pressed separately into individual tanks. After a couple of days of letting the sediment settle out, the juice was pumped into French barrels.






We ended up with 7 barrels of Cabernet Sauvignon. The barrels were topped every 3 weeks to keep the barrels full of wine and avoid oxidation. In July 2010, the varietals were racked off the sediments, the barrels cleaned of tartrates, and the juice was returned to the barrels.


In June 2011, blends were created. In creating the 2009 Cabernet Sauvignon, we blended 82% Cabernet Sauvignon, 12% Cabernet Franc, and 6% Merlot in a nitrogen filled stainless steel tank. It was then bulldogged back to newly marked barrels. The wine was filtered and bottled the 2nd week of September 2011. We bottled 225 cases of Cabernet Sauvignon.





2010 Chardonnay


This vintage of Catherine Bonneau Chardonnay was harvested on October 5th 2010, it was hand cluster sorted and pressed that morning. The juice was pressed into a chilled tank where it settled for 2 days. We then racked the wine into 4 neutral oak barrels and 1 new Marsanne medium toast French barrel. We inoculated the 5 barrels with D47 yeast and the wine in barrel for 10 days. Once fermentation was complete we consolidated the wine into 4 barrels over the lees. This Chardonnay was stirred once a week for 4 months with an additional 3 months of resting before bottling. It was bottled on August 29th 2011. The 2010 Chardonnay is lighter than the 2009 due to vineyard conditions. It rained more in 2010 than 2009 which we believe to be the reason for this lighter vintage. It's crispier than most California Chardonnays with moderate creaminess. 104 cases were produced.
