Appellation: Howell Mountain Varietal (percentages): 98% Cabernet Sauvignon, 2% Cabernet Franc Age of vines: Plantings from 1989 Viticultural Techniques: Sustainable Winemaking and Fermentation: The wine grapes are cold soaked for 5-7 days; fermentation begins with native yeast, and then inoculated at the peak of the reaction. Fermentation on skins varies from 8-18 days in stainless steel tanks and/or open top barrels. Aging: 18 months in French Oak, 55% new wood, Acid: 5.88 g/L, pH: 3.72, Alcohol: 13.7%
