From the "ground up", Cafe Dolce aspires to share the warmth and wholesomeness of genuine handmade pastries and high quality espresso. We combine the amazing flavors and textures of European Desserts along with the science and art of crafting the finest Italian espresso in every cup. We seek to nurture and enliven the human soul with great company, great food, and a great atmosphere.

Eric Wheeler has lived in Colorado for 43 years attended Moore Elementary School, Byers Middle School, and South High School. Seeking peace, kindness and consideration, Eric hopes to pass this energy on through Cafe Dolce. He sought to create a family oriented atmosphere that is warm and friendly, peaceful, inviting; most of all, a place that friends can gather and share their positivity.
Beginning at age 13 at a local diner, Eric first fell in love with coffee when he tasted the bitter sweet harmony of sugar, cream and coffee beans. From that moment on, this memory sparked his ambitions to search for the finest cup of coffee and is happy to be providing Illy Coffee, Italy's finest espresso at Cafe Dolce. Eric and Chris started as best friends since they were 13 years old. Along with Chris's wife, Zoi, and Eric's wife Karen Wheeler they brought their business skills, culinary talents, and love of food and coffee together to make Cafe Dolce.
Renowned Five-Star Chef, Zoi, expresses her incredible culinary talents through her decadent pastries, torts, baklava, and cookies. For 13 years, Zoi perfected her craft of cooking and baking in her home country of Greece. She moved to Colorado in 2010, bringing with her the taste of European pastries and dessert
