Fish Bones American Grill is Lewiston-Auburn's alternative seafood restaurant.  Located in an antiquated mill at 70 Lincoln Street in the middle of Lewiston's renaissance, Fish Bones offers a unique atmosphere with its large windows, aged brick, and rough hewn timbers.

Hosts Paul and Kate Landry identified a need for an upscale fish house that offered healthy choices while maintaining seasonality. It was their intent to introduce a seafood grill concept fusing American cuisine and products with a multi-national flair.  Additionally, the new concept provided an opportunity to offer unique preparations and presentations while utilizing healthier cooking techniques.

Their chefs' focus on light grilling and roasting, and then add naturally reduced sauces, to furthur enhance their creations. This technique allows their chefs to incorporate visually appealing creations along with the ability of their diners to turn flavors on and off as they wish.
