Spain's "Bordeaux" region produces some of the most eclectic Spanish wines. This is one of them.
Pago de Caraovejas is made out of Tinto Fino (Tempranillo), Cabernet Sauvignon and Merlot coming from the 160 hectares of south-southeast facing vineyards. The estate wine has rested 12 months in French oak and American oak barrels before bottling in April 2013. The wine has a purple red with same color rims color, aromas of ripe fruit, dairy, balsamic notes and sweet spices. Balanced, franc and lingering in the mouth.
The taste of this wine will remain in memory long after you finished the bottle.

José Maria Ruiz (Chef and owner of Segovia's acclaimed restaurant José Maria) owner has a clear idea on how to create a top quality wine that can be combined with braised pork, traditional dish in that area of Spain.
Due to its intense color and the natural winemaking process this wine may precipitate inside the bottle.
