Rare to find. 16 Years old Calvados Domfrontais; typical regional product from Normandy, France.

The base for this brandy is 50% to 80% pear,  the other part is apple. The AOC Calvados Domfrontais requires a minimum of 30% pears. Both fruits are fermented for 4 weeks. The result is a 6% abv cider, which is then distilled in a single column still over a direct fire. The spirit is then aged in small old oak barrels, where it can benefit from the flavors and fruits of the older spirits. 

Being a blend of spirits aged for at least 16 years you can qualify this calvados as an XO. 

Dry calvados with flavors of vanilla and orange.

Ideally served alone or accompanying "crepes topped with apple and pear" or a "Tarte Tatin" or a praline with pear ganache.
