The Bruery is a boutique craft brewery located in Orange County, CA specializing in barrel aged and experimental ales. Nearly half of their beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

• Terreux Gypsy Tart: Gypsy Tart is a Flanders-style brown ale with a California touch.  A beer that can trace it’s origins to Great Britain, but more famously perfected in western Belgium, has been updated through our own modern techniques, delivering the sweet body and mildly tart finish that has won over numerous generations of beer drinkers in Europe. Our rendition of this wonderful beer style is perfect for both sour beer amateurs and advocates alike. FOOD PAIRING-Halibut with brown butter, seared scallops, rib-eye steak with mushroom sauce, fresh strawberry and mint salad.


• Cuir: Cuir is our third anniversary ale. It is the same recipe as Papier, but again created using the Solera method. Each year we will continue to blend old barrels of anniversary ale with a new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.FOOD PAIRING-Osso bucco, whole roast duck, crème brûlée, buttery buttermilk pancakes and any occasion for celebration.


• Arrrggghhh! Preservation Series 2015: Arrrggghhh! be refreshin’ly tropical and surprisn’ly hoppy. Perfected fer a sunny day on the high seas, but just as well for a landlubber like ye. This lager is best enjoyed fresh for peak flavor. The ideal storin’ and servin’ temperature is 40ºF (4ºC). Best served in a tulip, wine glass, or pewter drinking tankard. Yo ho! FOOD PAIRING-Fish tacos, spicy Thai peanut chicken and rice, brined kraken, brie on the high seas.
