Born and raised in New Jersey, Bill Telepan grew up in a family where they shared hearty meals sometimes made with vegetables from their garden.
Chef Telepan, acclaimed former chef of the 3-star Judson Grill, opened his fine dining restaurant with partner Jimmy Nicholas in 2005, and it has since earned glowing reviews including a Michelin Star and two stars from The New York Times.
Heralded as one of the first and most acclaimed devotees of the Greenmarket movement, Chef Telepan cooks seasonally, sourcing from local farmers and fair trade cooperatives to create honest, robust dishes that allow the natural flavors to emerge from the ingredients. Chef Telepan’s cuisine reflects his strong support of the slow food movement, which encourages a food system based on the principles of high quality and taste, and environmental sustainability.
Telepan’s menu offers a variety of fresh seafood and meat dishes inspired by the market’s latest bounty. Guests can also enjoy an abundance of seasonal vegetable dishes including a “Meatless Monday” 4-course vegetarian tasting menu available on Monday evenings.
