Adelaida is an unincorporated community, located 10 miles west of Paso Robles, in San Luis Obispo county. Dr. Stanley Hoffman planted the famed HMR Vineyard on the Hoffman Mountain Ranch in 1964 and with the Van Steenwyk family and others following suit, the area has become an important source of elegant wine grapes. The Van Steenmyk family formed Adelaida Cellars and offer an unique Cabernet Sauvignon here with their End Post brand. "End Post anchors the vine and defines the wine." This 2012 is 98% Cabernet Sauvignon, 1.5% Cabernet Franc and .5% Malbec, is left on the skins for an extended time, with daily pump overs, and is aged for two years in neutral French oak barrels. The goal was to allow the bright mountain fruit to dominate the flavor profile and calm down the tannins. The result is a unique wine with aromas of cassis syrup, violets, Christmas fruitcake and milk chocolate, with flavors of black currant and mulberry compote, mocha, cinnamon toast and vanilla.
