Our story
Opened in 2014, Seville Tapas is the realization of our dream to share the flavors of Spain with the people of the coastside.
Tapas, small snacks meant to be shared, are designed to encourage conversation among diners. There are many stories surrounding the origin of tapas, but, since the word itself means “lid” or “top” it seems likely to have come from the custom of serving sherry with a small slice of bread, which is placed on top of the glass between sips to keep fruit flies from being attracted to the sweet drink.
Whaterever the origin, tapas have evolved into a sophisticated cuisine. We’ve provided a primer, below, for those unfamiliar with the foods for which Spain is famous.
Primer
Romesco (ro-mess-ko) A traditional dressing and sauce made with fire roasted peppers, garlic, marcona almonds, olive oil and sherry vinegar.
Tortilla Española (tor-tee-ya es-pan-yo-la) The most common gastronomic specialty found throughout Spain. Layers of potato and onion are cooked in olive oil, then mixed with beaten eggs and cooked together into a tart. Similar to an Italian frittata.
Alioli (al-ee-oh-lee) Also called aioli. Mayonnaise infused with a mix of fresh and roasted garlic.
Jamón Serrano, Jamón Ibérico de Bellota (ha-moan ee-ber-ee-ko day ba-yo-tah) These famous Spanish hams, from specially bred pigs (the white landrace and the black Iberian, respectively), are dry-cured for at least 2 years, enhancing the taste and sharply differentiating it from italian prosciutto. Jamón Ibérico de Bellota, the most prized, comes from free-range pigs fed solely on wild grasses and acorns, and is cured for up to 48 months. All Spanish hams are thinly cut and served in a variety of ways in Spanish gastronomy.

EVOO Extra-Virgin Olive Oil. We only use Spanish of course!
Happy Hour Weeknights (except Tuesday), 3 – 5 pm.
Sundays: Enjoy a glass of sangria and watch us make paella (weather permitting!). We start cooking at 11 am and we are ready to dig in at 1 pm. We’ll offer a variety of combinations, such as local organic vegetables, chorizo and fresh local seafood, each week. Follow us on facebook or twitter to see the combinations.

The ONLINE auction closes on Sunday, March 26 and will transition to a live event “silent auction” on April 1 at Magic of the Coastside. The “up to” maximum bid received – either online or at the live event – will be the winner.
