Alex Raij and Eder Montero are chefs and owners of Txikito, a love letter to the Basque country in Spain—a region whose cuisine is distinguished by excellence and simplicity in both ingredients and techniques. High cuisine and grandmother’s cooking are equally revered, and Txikito aims to capture the many ways that food is enjoyed throughout the Basque country. This prize is for a special pig dinner for four—a family-style meal of classic pintxos, unique dishes of Basque inspiration, and the restaurant’s signature cochinillo.
