Come eat a roast chicken dinner at Mia's house in the Mission(24th and Shotwell). Dinner will feature Tartine Bread with cheese, wine and/or beer, roast vegetables, and 20th Century Cafe's Russian Honey Cake for dessert unless modifications are desired. (Please let me know about any allergies, preferences, or food restrictions when we schedule the dinner.) I could likely deliver anywhere in SF as well if desired, but it won't be as social or as crispy skinned.

I use Zuni Cafe's recipe, which is three pages long in their cookbook. It will be similar to Zuni's chicken in the air-drying and dry-brining process, but with modifications for our home kitchen.
