Chef Hennessey is an award winning chef and Dover native who recently competed in the Chopped Champions Food Network show. He graduated from Le Cordon Bleu at the Atlantic Culinary Academy in 2001. He has had experiences cooking alongside some of the best chef’s in the country including: Chef Charlie Palmer at New York City’s Aureole , Chef Grant Achatz at Trio in Chicago, Andrew Carmellini at Cafe Boulud, Thomas Rice and Ken Oringer at Clio, Eli Kaimeh and Thomas Keller at Per Se. Chef Hennessey is trained in classical French techniques and methods and now serves what he calls Progressive New England Cuisine, utilizing locally farmed and foraged foods to create artistically inspired dishes. 


Located just 10 minutes from Portsmouth and tucked away on the third floor of the historic Washington St. mill in Dover, New Hampshire. Stages at One Washington is a truly unique dining experience. Stages serves progressive New England cuisine.


The backbone of our cuisine is the nature of New England - the wild as well as the cultivated. We care for the traditions, yet strive to renew. We are ambitious, thorough, playful and ever exploring. Our cuisine is regional, and yet we are inspired by the whole world. We follow the rhythm of the seasons. During growing season we work intensively with nature's changing supply, preserving as much as possible in the process. This permits us to serve up a tiny bit of them on our plates all year round. We constantly explore and develop our base of ingredients and techniques. We cultivate our own herbs, and collaborate closely with our farmer friends.


We grow, harvest, preserve, serve, and love, New England.

Where applicable - the winning bidder is responsible for picking this item up from the BPC office in the 1791 building on campus between Wednesday March 6, 2019 and Friday March 8, 2019 or March 25, 2019 to April 12, 2019. If the item is not collected by April 13, 2019 then gift cards, tickets and gift certificates will be shipped to the winning bidder via regular mail, unless certified mail is specified by bidder prior to that date. If sent by certified mail, bidder is responsible for the shipping cost. All other items must be picked up.
