In regards to optimal drinking times, generally, we say 10 years is a great starting off point to opening your Montelena Estate Cabernet Sauvignon. Cooler years, generally, can age for longer since they have a higher level of acidity than a ‘hot’ or ripe vintage. Having personally tasted the 1978-2014 Estate Cabs over the years, in my opinion, the 2007, 2008, and 2009 are drinking beautifully right now, but would benefit from being cellared for another 6-8+ years. It all depends on your palate; if you prefer the younger wines that have more fruit and spice, or an older wine that has a more of an earthy, leather and tobacco characteristic. When I open these 3 vintages, I do not decant the wines. I simply have the bottles upright for 24 hours before I open the bottle. I open the bottle 1 hour before I serve the wine to let it ‘breathe’.
