The 2012 Caspar Estate Cabernet Sauvignon delivers the epitome of balance with the intensity of dark fruits, soft acidity and structured tannins. In the glass the wine is dark purple almost black in color, hints of what is to come on your nose and palate. The vibrant aromas of black cherry, bramble and dark currant fruit that are intertwined with notes of cedar and tobacco leaf that lead into cola, with hints of mint and coco. The palate is expansive, showcasing dark fruit, cola and sarsaparilla with depth found only in the terroir of Caspar Estate. The sweet notes of vanilla quickly expand into a rich and plummy mouth feel finishing with firm rounded tannins and a long building finish. Subtle flavors of tomato leaf and sweet apple pie Our wildflower honey is rustic and addictive. The strawberry-blond product of our bees has notes of dandelion, apple, artichoke and ripe olive.
