They make every bagel by hand, kettle-boiled and flipped in rotary ovens by their artisan bakers, some who have been with them for 20 years. They care about the food they make, and never use artificial preservatives, dough conditioners (like L-Cysteine - derived from duck feathers, yuck!) or chemical ingredients.
