Kaiseki is considered an art form in Japan, and you’ll understand why after sampling chef Brandon Go’s riveting ten-course tasting. Hayato is a masterclass in Washoku (or traditional Japanese cuisine), a Michelin-starred experience, and one of LA’s best splurge meals.

Reservations for Hayato are released monthly on Resy on the 1st of the month at 10:00 am PST for the following month, and they are all always snatched up within minutes! 

Dinner at Hayato is an omakase (chef’s choice) experience of approximately 10 courses that are prepared in front of guests at the counter in front of an open kitchen. All guests are served each course in unison, so they ask that everyone arrives on time, as cooking always begins promptly at 7pm.

Hayato is about creating a personal connection and dining experience that is as intimate as possible. This restaurant has been designed to make it feel like you are coming into their home for the evening. Dinner is served by the chefs themselves, at one of eight counter seats in front of an open kitchen.

The nightly omakase menu consists of approximately ten dishes focused on the best fresh seafood that is available.

The chef uses all of the classic Japanese cooking techniques (grilling, steaming, frying, simmering and sashimi) to create a widely varied menu with the best seafood that is available. There will be hot dishes, cold dishes, raw dishes and rice. Dinner usually lasts approximately two and a half to three hours. They are not just here to cook - they will spend the evening sharing their thoughts on the ingredients and cooking techniques, and strive to provide their guests with an experience that goes far beyond the typical restaurant visit.
