* Pope Valley 2015 Cabernet Sauvignon, 1 bottle

Atlas Peak 2004 Cabernet Sauvignon: The quintessential Napa Valley Mountain Vineyard blend, grapes for this wine come from Atlas Peak, Mt. Veeder, Spring Mountain and Howell Mountain. As harvest approaches, Atlas Peak's winemaking duo walks the vineyards – picking at full ripeness. Grapes are harvested by hand and delivered in 1/2-ton bins. After destemming, the berries are again hand sorted to ensure only berries reach the fermentation tank. The grapes are fermented in small lots to capture the essence of each vineyard site. Grapes are cold soaked for up to 2 days before fermentation, and maceration is extended up to 30 days to extract maximum color and flavor. Drawing from each mountain site, the Napa Valley Cabernet Sauvignon is rich with ripe dark fruits and blueberries, overlaid by subtle vanilla bean aromas. Well structured, with supple tannins.

Clos Du Val 2012 Cabernet Sauvignon: Clos du Val Cabernet Sauvignon offers notes of chocolate, blackberry and fresh black pepper on the nose. The textures are silky, creating a vibrant wine with flavors of toffee, vanilla, blueberry and currant. The tannins are well integrated, creating a wine for which Clos Du Val is known; balanced, elegant, and classic.

Pope Valley 2015 Cabernet Sauvignon: Dried bay leaves, coriander, and English plum give way to savor aromatic undertones of light-roasted Central American coffee toasted pignoli nuts.

Atlas Peak: Founded in 1987, the intent was to focus on Italian varietals including Sangiovese. However over time their relatively high altitude vineyard location, specific soils & climate proved to be very conducive for growing premium Cabernet Sauvignon and now this varietal is their main focus. The actual winery was located on Atlas Peak – (surprise, surprise) but they actually make their wine now at a large winery in Healdsburg (Sonoma County). Their vineyard land comprises about 500 acres making them one of the larger growers on Atlas Peak. They make ultra premium Cabernet Sauvignon with Napa grown fruit entirely from mountain vineyards located at elevations of 1000 feet or higher.

Atlas Peak’s vineyards remain constant which means they source from the same vineyards year after year. This helps build consistency into the wine and the winemaker over time knows the type of fruit he is getting. The winemaking equipment was recently upgraded and is now state of the art. These are serious Cabernet’s for the serious Cabernet Sauvignon drinker. They are very inky dark wines, big, bold, brawny and full of fruit with huge tannins. Lets see what these wines are like in 10 years! All their wines are unfiltered and unfined for maximum flavors and color. http://www.atlaspeak.com

Clos Du Val: John and Henrietta Goelet founded Clos Du Val in 1972. A descendant of Bordeaux's famed wine merchant, Barton & Guestier, John had a vision of producing Cabernet Sauvignon that would rival the world’s best. French trained winemaker Bernard Portet was selected to head the search for the perfect property from which to produce these wines. In 1972, two years and five continents later, a parcel in what would become the Stags Leap District in the Napa Valley was chosen to fulfill this lofty dream. Our inaugural wine, the 1972 Clos Du Val Cabernet Sauvignon, was part of the group that topped French wines in the legendary 1976 Judgment of Paris blind tasting. Ten years later, our Cabernet Sauvignon took first place in the Judgment of Paris rematch. www.closduval.com

Pope Valley Winery: The Pope Valley Winery was founded in 1897 by Ed Haus as Burgundy Winery & Olive Oil Factory. A century later in 1997, the Eakle family purchased the historic winery and gave it a new life as Pope Valley Winery. In 2009 the next generation of Eakles stepped in to continue building and furthering the family's vision for Pope Valley Winery as a fine winemaking establishment. Currently siblings David Eakle, winemaker, and Diana Eakle Hawkins, general manager, are making great strides in bringing Pope Valley Winery to the next level. www.popevalleywinery.com
