Imagine at the end of the class — a tray of delicate gruyere pastry puffs—the famous gougeres—arriving steaming from the oven, exuding the swoon-inducing scent of toasted cheese. Tasting such intense flavor in a tiny wisp of choux pastry will be intoxicating, a promise of wonders still to come.
