This sake comes straight out of Napa, California, so of course it has got some Napa wine flare. The team at Sequoia Sake starts off with their junmai ginjo and lets it age for three months in red wine barrels. This lets the sake absorb some of that woody wine flavor and a little bit of Napa spirit too. This sake has a gentle mix of vanilla and fruit that almost reminds us of Thai tapioca with melon balls. It goes well with light meals, buy holds up just fine one its own.
