About Pax:



Established in 2000 by Pax and Pamela Mahle, Pax Wines focuses on Syrah and Gamay Noir from cool, coastal sites, as well as a selection of esoteric varieties that showcase the great diversity of California wine.


From the vineyard to the cellar, a holistic style of winemaking is practiced. This means that all the fruit is grown using organic, sustainable, or biodynamic methods and no unnatural additions are applied in the winery. This is done by taking care to use only grapes that are grown without the use of chemicals and by hand making wines with as little intervention as possible.  


About the wines:
Grapes from the Bearg Ranch are grown biodynamically without pesticides or preservatives.  Enjoy them fully by consuming within 1-2 days of opening.  Megan and Kerry Bearg are sister and brother-in-law to Marin Waldorf parents Tierney Caselli and Saul Rapisardo.


2019 Pax Gamay, Bearg Ranch.  Tasting Note: Black cherry, cinnamon bark, cherry cola, loamy earth and strawberry gelatin aromas spring from the translucent black cherry-colored wine. Dusty flavors of red roses and black summer-fruits carry an open-knit, textured and more mysterious character than the other two 2019 Gamays. This Bearg Ranch Gamay is deeply savory and umami driven with a surprising fresh snap of red fruit on the finish. Think Fruit + Earth.


 


The Monduese Noir can be purchased only at the Pax tasting room.  


Mondeuse (Noire) is an ancient red wine grape variety native to eastern France, associated specifically with the Savoie region.  A classic Mondeuse wine is aromatic with a deep purple color, with plenty of acidity and considerable tannins. The bouquet is powerfully aromatic, with notes of sour cherries, damson plums, pencil lead and an invigorating hint of black pepper. 


 


The 2020 Pineau d'Aunis is not yet released.


Pineau d'Aunis is a dark-skinned wine grape variety whose story began in the Loire Valley in the Middle Ages. Despite once being popular with royalty on both sides of the English Channel, the variety  is now increasingly rare, and is limited to a role in the rosés and light reds of the central Loire.  Pineau d'Aunis is valued for the gently peppery spiciness it brings to the area's rosé wines.
