All wines are independently tested for purity (less than 1g/L of sugar, less than 12.5% alcohol and less than 75ppm sulfites). Average alcohol content is 12.1%. The vineyards are not irrigated (dry farming) which saves 10,000 gallons of water per acre annually. Dry farmed vines are stronger and produce better healthier fruit. Small family farmers make their wines by hand avoiding machinery.
