The Chef caramelizes the whole pineapple before he puts it into the rum to infuse.  Many describe it as tasting almost like a dark rum pineapple upside-down cake. It is very rich with an incredibly long finish. When you are finished sipping it, you can still taste the pineapple notes intensifying on your palate for 5 or 6 seconds.  It is very popular to sip this rum ice cold on its own, as a lovely dessert cordial. It is also wonderful in any type of fruit juice.
