With a nostalgic return to Florida and intrigued by Miami’s evolving culinary scene, Paley’s approach to Latin American cooking is underpinned by bold flavors of traditional dishes and decidedly bright–a showcase for fresh ingredients. The New Jersey native attended culinary school in Florida after graduating from university, inspired by the intersection of creativity and critical thinking unique to a career in restaurants.

Having cooked in kitchens from Kentucky to Texas, Paley draws from his surroundings to create a sense of place you can taste in his menus.
The Chef has garnered praise from both Food & Wine Magazine for artisan pizza and Southern-inspired cuisine and Bon Appetit’s 50 Best New Restaurants list for his embrace of regionally- sourced products with a custom-built, wood-burning fireplace.
