 J Vineyards 2012 Late Disgorged Brut

The pinnacle of our sparkling portfolio, our 2012 Late Disgorged Brut reflects the depth of flavor and grace gained from seven years of en tirage aging. Fine, delicate pearls of bubbles on the vigorous mousse bring generous aromas of honeycomb, poached pear and mandarin zest to the forefront. Hints of green apple, golden raspberry, tangerine and white florals saunter across the soft palate, mingling with richer notes of marzipan and lightly baked pastry. Elegant and refined, the wine’s luscious fruit characteristics are balanced by vibrant acidity for a crisp, mouth-watering finish. Pair this bubbly with fresh crab cakes or camembert topped with honeycomb.

This is made from 61% Chardonnay, 36% Pinot Noir and 3% Pinot Meunier. Given time to gel in bottle, it is light-gold in color, with a fervent mousse that leads to a weighty midpalate of texture and heft. Blood orange, green apple and a peanut brittle-like nuttiness mingle through a lengthy finish.
