THE RIPE & READY INCLUDES:

Bayley Hazen Blue (1/8 wheel, approx. 12 oz) - A complex mixed-milk blue, with notable aromas of anise and sweet cream. A dense but giving texture is creamy on the palate.
Harbison Mini (TWO 5-oz wheels) — A spreadable bloomy-rind cheese wrapped in spruce bark, made by Jasper Hill Farm. Winner of the 2018 ACS Conference Best in Show Award!
Vault 5 Cheddar (5-oz piece) — This smooth textured cheese is perfect for melting, though complex and savory flavors make it a stand-alone favorite. Pair with pale ales or oaked reds.
Clothbound Cheddar (TWO 6-oz wedges) — An approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy, with caramel sweetness to the finish.
