Sarah Kersten Studio's Medium Fermentation Jar in Classic White glaze.


In between the Small Fermentation Jar and Large Fermentation Jar sits their Medium Fermentation Jar. The jars hold a little less than 4 quarts, making them an ideal jar for an enthusiastic fermenter or a family. Each full jar yields approximately 3.5 quarts of fermented goodness. The Medium jar has a wide mouth, which makes it easy to reach in.  



The SKS fermentation jars are crafted with a waterlock seal, an ancient design which allows for an oxygen-free environment— the gold standard of vegetable fermentation. To use, prepare and pack vegetables inside the jar, then fill the channel at the jar’s mouth with water. Once the lid is placed into the water, fermentation begins, creating CO2, which in turn pushes oxygen out of the seal and maintains an oxygen-free ferment. 


Our medium jars measure 9.5 inches x 9 inches. 


Each jar comes with a set of stoneware weights for Fermentation.

I’m Sarah, founder of Sarah Kersten Studio. I work in Oakland, California, where the combination of a rich and robust pottery tradition and the inspiration of coastal California combine to inform the nature of my work.
I started making ceramics at a young age and founded Sarah Kersten Studio in 2012. In the beginning, I hand threw my signature fermentation jars, working alone on the wheel. I quickly realized that working as a team of one wasn't sustainable and began learning about production techniques that would allow me to create my signature work with the help of others. Today, we are a team of nine, and every day we make ceramics from start to finish in a 6,000 square foot studio in Oakland. All of our glaze formulas, clay formulas, designs, and molds are custom made in house. We utilize modern and traditional processes to make our work. Our ceramics are enjoyed by individuals in their homes and chefs in their restaurants. We are thrilled to make ceramics that are truly used. Our work is known for its beauty and its durability. 


Much of our aesthetic has grown out of the natural tendencies of the materials that we work with. We love high fired stoneware for the beauty of its features— which are always muted and subtle in hue— and for its strength. These traits, together with a passion for seasonal cooking, a great love of being and making at home, and a deep respect for pottery tradition, make our work what it is. When so much of the world is plasticized and high-tech, it’s pottery’s ancient heritage that grounds us, along with our commitment to showing up day after day to move our work forward.


We aspire to create pieces that are sculpturally beautiful, effortlessly functional, and of heirloom quality. All of our designs respond to real needs, needs we have had in our own kitchens, or wishes we've heard from friends and chefs we've worked with. We work slowly, considering shape, size, and the overall feeling of a piece for as long as it takes to get it just right— sometimes years. But we like it that way. We make objects that will live intimately with you and yours, that you’ll handle multiple times a day, and I take that honor seriously, and joyfully. For us, pottery and its history is part of who we are as a people and a deeply meaningful way to spend our days, as is the knowledge that our work goes towards making people’s homes more beautiful, functional places to live, love and cook.
