• Harbison — 9 oz Wheel — Our spruce bark-wrapped original with a spreadable, buttery interior. Harbison is the epitome of our motto “A Taste of Place” with woodsy, mushroomy, and sweet cream notes.


• Eligo (1/4 brick) — A buttery brick-shaped blended cow and goat milk cheese with mild goat flavors and a little funk from a rosy, orange natural rind. Eligo’s flavors bring out the best in both milk types; buttery richness from the cow milk carries a soft, white pepper spice note and goat aromas. A densely creamy texture is a bit softer beneath the peachy washed rind, where the flavors are more pronounced.


• Bridgman Blue (1/8th wheel) - A complex mixed-milk blue, with notable aromas of goat milk, white pepper, buckwheat honey and caves. A dense but giving texture is creamy on the palate.


• Cave-Aged Cheddar (6 oz piece) — This smooth-textured cheddar is as nice for snacking as it is for melting. Pair with NEIPA’s or oaked reds.
  Vault 5 Cheddar (6 oz piece) — This smooth textured cheese is perfect for melting, though complex and savory flavors make it a stand-alone favorite. Pair with pale ales or oaked reds.


• Willoughby (8 oz wheel) — A pudgy, buttery washed-rind round with notes of boozy fruit & roasted meat.
