Winemakers in France made delicious wine using ancestral/organic/biodynamic methods. Once opened, that wine is perishable because it is alive. We save it from perishing by allowing it the right environment to change into vinegar. We make batches of red wine and white wine vinegar. It is alive and very tasty!
