The proprietors, Keizo Aoi and Yuki, were born and raised in the Gifu and Osaka Prefectures in Japan. They grew up immersed in the world of food, both coming from families that ran restaurants. After coming to America, they have spent 20 years developing and honing their skills, working in Boulder, CO as chefs specializing in Japanese food. This led to the creation of AOI Sushi and Izakaya, with the intention of showcasing the culinary culture of Japan with every dish they serve.
