Barbara Oki was a school teacher for 25 years, first in Oahu before moving to Kauai in 1965 and teaching students here. She firmly believes, and would tell her students, "If you have a dream, you should pursue it, research it, you should do it."

Longtime locals know Aunty Barbara from her many businesses she owned on Kauai throughout the years. She started a clothing store called "Barbie's Boutique" specializing in career women's fashions. Then she went into manufacturing of Hawaiian wear. She opened 5 shops selling that clothing. She had a catalog that she distributed nationally to sell her clothing. After Hurricane Iniki she opened Uniforms by Barbie and her clients consisted of the Fremont Hotel & Casino and Tropicana Hotel in Las Vegas, as well as various businesses on Kauai.

Her first restaurant was The Saimin Stand in Kekaha opened in 1993. The she opened the Oki Diner in Lihue home of the "famous Oki pancake". Many celebrities and dignitaries would frequent Oki Diner. Finally, in 2017 she opened Oki's Box Lunches & Omiyage in the Kukui Grove Mall in Lihue, where she specializes in great local food as loco moco, Saimin, Neal's Chicken, Lau Lau, Pork Adobo, Pancit, and a Korean kimchi fried rice, amoung others. And she still serves the famous pancake breakfast all day long with her own coconut syrup. Her coconut syrup is so popular you can purchase it in stores around the island. Look for the blue bag of dry mix labeled "Hawaii's Best".

Aunty Barbara's philosophy is, "If you have a restaurant the food should be delicious, it should be done in love so when people eat your food they should be totally satisfied".
