Rare Hawaiian Organic White Honey is pure Kiawe (key-ah-vay) honey. It is a honey so delicate that it must be handled in a very meticulous and exact manner in order to preserve its natural excellence. Any mishandling can radically effect its color, flavor and texture, and its nutritional qualities.

Rare, and Unique Honey:
Rare Hawaiian Organic White Honey is rare because it comes from the flowers of only one variety of tree - the Kiawe tree (Prosopis pallida) - and from only one grove of these trees that grows sparsely at sea level in near desert conditions on the leeward side of the Big Island of Hawaii. The flowers of the Kiawe tree are among the most prolific producers of nectar in the world.

Unique Grove of Kiawe trees:
Except in this unique grove on the Big Island, these trees normally grow about 15-20 feet tall. But in this one grove of Kiawe trees on the Big Island there is underground water so close to the surface that these trees tap into the water and grow to 60 feet tall. It is a combination of this desert tree having underground, natural irrigation and the soil that eroded from an ancient glacier that once existed atop the nearly 14,000 foot Mauna Kea Volcano that creates this most incredible honey.

The Taste:
The taste of the honey is creamy, opalescent and floats off your tongue leaving you to savor its subtle, yet rich, tropical essence.

The Color:
The natural color of pure unheated Kiawe honey is a pearly white. Most honeys are variations of amber in color. While there are other white honeys, pure, unheated Kiawe has an opalescence that is beautiful and enticing.
