Founded in 1829, the French vineyard Bollinger is still in family hands. Lily Bollinger, took the reins in 1941 upon the death of her husband Jacques. She successfully managed the business, acquired new vineyards and is credited with one of the most famous Champagne quotes in existence. "I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and I drink it when I am. Otherwise I never touch it, unless I'm thirsty."
